Liz's Banana Cake

Hi all! We are excited to begin sharing personal posts with you - we hope you enjoy as much as we enjoy creating them! 
We are three sisters and named our site after our Grandmothers, Liz and Honey. Here is a photo of Liz - she was such a beauty! 
Our mother has been making this banana cake for us our entire lives and we aren't kidding when we say... It is SO good. 
Preheat oven to 375.
To start, combine one stick of butter (room temp), 1 1/2 cup sugar and two eggs. Mix with mixer. 
In a separate bowl, combine 3 tbs sour cream, 1 tbs milk, 1 tsp baking soda. Dissolve these three together. 
Alternate combining sour cream mixture and 1 1/2 cups flour into butter mixture with mixer. 
Add 1 tsp of vanilla in last and stir. 
Fold in three ripened smashed bananas. 
Grease 9x13 pan and line with wax paper, then grease wax paper. (I used two 9" round pans and it came out great! You end up cutting the cake in half when baked in a 9x13, so separating into two pans is just fine) Bake at 375 for 30 min. (I ended up baking for around 22 min in the two 9" round pans - just keep an eye on the cakes!) 
Let cakes cool and begin icing. In a sauce pan, melt two tbs butter. Add in one cup powdered sugar and turn off heat. Add 1/2 tsp vanilla and a splash of milk and stir to combine. Add milk to thin out to a consistency you like. This is for ONE LAYER of the cake only. 
Ice one layer of cake (if you used a 9x13 cut cake in half after cooling) and make the icing again for second layer of cake. Ice and layer cakes together. It's best to eat when warm and gooey! Enjoy! 
BEWARE! You will consume unhealthy amounts of this cake once it's out of the oven. We ate half in one sitting. Oops! 

Banana Cake

1 stick butter, room temp

1 ½ cup sugar

2 eggs

(mix these three together)

3 TBS sour cream

1 tsp baking soda

1 TBS milk

(dissolve these 3 together)

1 ½ cup flour

1 tsp vanilla

3 bananas smashed with fork

 

Alternate sour cream mix and flour into butter mixture with mixer.  Add vanilla in last and stir.  Fold in smashed bananas.

Bake at 375% for 30 min.  Grease 13x9 pan and line with wax paper, then grease wax paper. (or use the 9" round pans)

 

Icing

Melt 2 TBS butter

1 cup powder sugar

½ tsp vanilla

Splash of milk

(Turn heat off when you pour in powder sugar)

 

Make icing twice – cut cake in half
